Meatball Curry

Recipe can be made a day ahead

Suitable for freezing

Serves 4-6

Ingredients:

2 Tbs oil

1 clove garlic, crushed

2 medium onions, chopped

1 Tbs grated fresh ginger

½ tsp ground turmeric

½ tsp chilli powder (or a dollop of sambal terasi)

1 tsp garam masala

2 medium tomatoes, roughly chopped (or 1 tin of diced tomatoes)

1 Tbs chopped fresh mint

Meatballs:

750g minced beef

¼ cup chopped fresh coriander

1 medium onion, chopped

1 Tbs grated fresh ginger

2 cloves garlic, crushed

½ tsp garam masala

1 small fresh chilli, seeded and chopped

Method:

  1. Combine all the ingredients for the meatballs in a big bowl. Mix well. Roll level tablespoons of the mixture into balls.
  2. Heat oil in pan, add meatballs in batches. Cook, turning until well browned. Drain on absorbent paper.
  3. Add onions, garlic and ginger to same pan. Cook, stirring until onions are soft. Add spices and cook, stirring, until fragrant.
  4. Stir in tomatoes and meatballs and cook covered for about 20 minutes. Add a little water if too dry. Stir in mint.
